This cold brewed coffee is pure aroma, without that forced bitterness and it even has smaller quantity of caffeine. 
It is wonderful to be used in cold recipes such as  ice-coffee, smoothies, milk shakes, in addition of being gentle to your stomach. 

Ingredients

- 1 and 3/4 cup of coffe powder
- 3 and 1/2 cup of cold water

Preparation

In a glass container, combine both ingredients and close well.
Let it sit from 12 to 24 hours.
Pass the liquid through a very thin sieve, slowly, not to raise the coffee powder. 
In the end, don't let the powder fall into the sieve, just discard it. 
Ready!
Now your cold brewed coffee can be diluted at your taste, with water, milk or whatever you wish. 
A suggestion is to dissolve half half. 
Ready!

Recipe of Plum and Pineapple Cake

Recipe of Plum and Pineapple Cake

Ingredients

Dough
- 4 Tbsp sugar
- 3 Tbsp wheat flour
- 3 Tbsp potato starch
- 4 eggs
- 1 tsp baking powder
- 1 tsp vanilla sugar

Filling
- 250 g pitted dry plums
-1 big can of carnation extra thick cream, or thick double cream or mascarpone (~250g)
- 1 can of sweetened condensed milk (cooked 15 minutes in the pressure cooker)
- 1/2 can of pineapple (without the syrup)

Covering
- melted white chocolate or icing or a layer of marzipan

Preparo

Dough: Beat yolk + sugar + vanilla sugar until it gets a lighter color and increases the volume. 
Add manually and slowly the wheat flour + corn starch + baking powder. 
After well combined, incorporate the well beaten egg whites.
Spread the dough evenly in a baking tray covered with baking paper.
Bring it to oven at 180C until it is golden and when you pinch it with a toothpick, it goes out clean.
(i spread a slim layer in a big rectangular baking tray and after baked, i cut the dough in 3 equal pieces, that will be each one a layer of the cake)

Filling
Remove the label of the condensed milk can and put the can inside a pressure cooker. 
Cover the can completely with water, close the pressure cooker and let it cook during 15 minutes from the moment it takes pressure. (it will be lightly tanned, not dark caramel).
Let it cool down and reserve.
Beat the pitted dry plums in a mixer of food processor until it becomes a paste (it can have a few bigger bits)
In a bowl, mix the beaten plums + cooked condensed milk + chopped drained pineapple + extra thick cream. 
(you may use around 3 slices of fresh pineapple, but beforehand you will have to cook it in a bit of water with sugar and then to drain well)

Mounting
Pierce each part of the dough with a fork and damp it with a bit of water.
(make it with the piece of dough already in the final place, not to break it)
Fill the cake with the filling in layers and if you have extra filling you can also put it in the top and around the cake.
In the end, cover it with melted white chocolate, or icing of a sheet of marzipan..
Ready!

Recipe of Garlic Porridge

Who would not like to reach 120 years old?
Well, Mrs Jesuína dos Santos managed!
How? I don't know, but she eats garlic porridge every dinner!
Who knows if it works .... :-)

This simple recipe has many variations. It can be done with cassava flour (not starch) or with flaked corn flour .. I used a mixture of both... another option is to add pouché eggs or not... I put everything... heheheh..
The quantity of flour varies according to your taste, more or less liquid consistency. Anyway it is wise to add it slowly and wait some time for cooking, because it ALWAYS gets harder, specially when it gets colder.

Ingredients

- 1 head of chopped garlic (it is the complete head, it's not only one tooth)
- 1 litre of chicken broth (the best is the natural one, but tablets can be used)
- 1 chopped onion
- 2~3 Tbsp of flaked corn flour and/or cassava flour (not the starch)
- 1 tsp of dry marjoram
- freshly crushed black peppers to taste
- salt to taste
- 1~2 Tbsp of olive oil
- 2 branches of freshly chopped parsley
- 2 eggs

Preparation

Put the olive oil + chopped onion in a saucer.
Golden the onion.
Add chopped garlic (reserve 2 chopped teeth to add later - it's important).
Mix, but don't let it golden very much, neither burn.
Put the chicken broth + pepper + salt + marjoram, mix and bring it to a boil.
When it boils, SLOWLY, add the flour; keep mixing the liquid constantly and at the same time pour the flour, bit by bit until it reaches approx. 1 Tbsp.
Keep mixing for a while until the liquid thickens.
If it is too liquid yet, continue with the same procedure and wait until it is ALMOST in the consistency of your preference (because later it thickens more).
Put it on low heat.

If you want it more liquid, add carefully both broken eggs, without mixing, so that they will form a bag shape.
Let it stand until the yolk gets the consistency that you prefer and turn off the heat (i let it stay for 2 minutes).

In case you want a more consistent porridge, like a polenta, then turn off the heat and reserve the porridge.
Cook the eggs separately: saucer with boiling water, mix it strongly to form a swirl, remove the spoon and break the egg in the center of the swirl. Don't mix anymore. Cook as much as you wish and later add the cooked egg carefully to the porridge.

As soon as you remove the porridge from the heat, add chopped parsley + the rest of chopped garlic and stir well.
It's this garlic that will enhance the flavor of the porridge.

This covering  is a sweet sauce that generally is put on Brazilian carrot cakes.
It forms a slim crunchy crust  on the surface and continues creamy under ;-)
This covering is wonderful for any cake :-)

Ingredients

- 6 Tbsp of sugar
- 6 Tbsp of cocoa powder
- 3 Tbsp of butter
- 2 Tbsp of milk

Preparation

Mix all ingredients in a saucepan.
Bring it to a low heat, stirring always.
When it begins to boil, let it cook more 1 minute and turn off the heat.
It gets a bit thicker when it cooks.
Now, just spread it on the cake and wait it to cool down.
Ready!

This is a traditional Estonian salad, served generally in days of party and holidays :-)
If made with salted herring, it is necessary to soak it in cold water overnight beforehand.
If cooked, marinated or smoked, this is not necessary.

Ingredients

- 500 g boiled beets
- 500 g boiled potatoes
- 4 pickled cucumbers, chopped
- 2 apples, chopped
- 2-4 boiled eggs, chopped
- 300 g chopped cooked sausage or fried meat, (optional)
- 1-2 chopped onions
- 150 g herring fillets, chopped

Salad Dressing
- 400 g sour cream (20% fat)
- 1 tsp mustard
- 1 Tbsp sugar
- 1/2 tsp ground black pepper
- 2 Tbsp vinegar

Preparation

Mix together all ingredients.
Let cool before serving the salad.
If necessary, put additional flavorings.
Ready!

The confectioner's cream is a bsis recipe, used in many sweets, cakes and pies. 
It is simple to make and very useful :-)

Ingredients

- 500ml of milk
- 100ml of sugar
- 2 tsp of vanilla sugar or 1 lid of vanilla essence 
- 50ml of flour
- 2 eggs + 2 yolks

Preparation

Beat the eggs + yolks slightly and mix all ingredients until it is homogeneous (if you wish you can put in the mixer).
Put the liquid in a saucepan and cook in medium-low heat, without stopping mixing since the beginning. 
When it thickens and begins to boil, cook for 1 more minute and turn off the heat. 
If you wish it to have a more professional appearance, pass the cream through a sieve to be smooth and beat in a mixer until it gets cold.
Ready!

Ingredients

For the dough:
- 500ml of water
- 500ml of wheat flour
- 100g of butter
- 1 tsp of salt
- 1 tsp of vanilla sugar
- 6 eggs

Filling: sweet of milk or confectioner's cream - recipe HERE

Coverture: melted dark chocolate

Preparation

In a pan, put water + butter + salt + vanilla sugar.
Bring it to boil, mixing it evenly. 
When it is boiling, throw ALL the flour at once inside the pan. 
Turn off the stove and mix it quickly until it becomes a homogeneous ball of dough. 
Let it coll until warm. (not to cook the eggs)
As soon as the dough is warm, add the eggs, one by one, mixing until it is homogeneous.
(In the beginning it looks like it's not going to work, but later the dough gets its way)
If you wish you can mix it with a mixer, using dough spades.
Cover a big baking tray with backing paper. 
Place the dough carefully with a spoon, making it get the shape of a doughnut or pudding.
Carefully, try to smooth the surface of the dough. 
Bake it in a preheated oven at 200ºC for 15 minutes, later, diminish to 180ºC and let it bake until it gets well stuffed and golden.
Turn off the oven and let the dough there inside to finish cooking well in the centre. 
Let it cool.
Put the cake where you want to serve it. 
Cut the cake alongside with a knife. 
Put the filling at your choice with sweet of milk or confectioner's cream.
Put back the upper part of the dough and cover it with a layer of melted dark chocolate . 
Wait until the chocolate hardens.
Ready!
